Scallops with lobster sauce, black pudding and celery jelly served at Signature Restaurant is another very successful variation of the scallops in the implementation of Chef Wojciech Kilian. This dish appeared in Signature’s menu in late spring. It is extremely successful composition both in terms of the appearance and taste. Scallops are combined with intense, condensed lobster sauce, invigorated with original, slightly tangy celery jelly and contrasted with the unleavened, well seasoned black pudding.
